Immune Boosting Smoothie Recipe

Yield: Serves 2

Ingredients

  • 1 apple, quartered, core removed
  • 1⁄2 frozen banana
  • 2 kale leaves, stems removed
  • 1 celery stick, quartered
  • 1⁄2 lemon, seeds removed, peeled
  • 1⁄4 cup parsley leaves
  • 1-inch knob fresh ginger, peeled, optional
  • 2 cups coconut water
  • 1 cup ice

Pro Tip: Add a spoonful of virgin coconut oil
to the above to help your body absorb the fat- soluble vitamins. Coconut oil is an energizing fat with natural antimicrobial properties making it good for your immune system.

Instructions

  1. In a blender, combine the apple, banana, kale, celery, lemon, parsley, ginger (if using), coconut water, and ice.
  2. Blend on high speed for several minutes until smooth (use the tamper tool to keep the blender swirling).
  3. Divide between two cereal bowls or pint-size mason jars, add toppings and enjoy.
