For Recovery: 10 grams of protein in one muffin
It’s easy to increase the protein of our Superhero Muffin Mix with the following delicious and nutritious recipe. As a bonus, these muffins are also high in calcium from the yogurt.
Protein is an important building block for recovery but too much protein before a workout can be hard to digest. That’s why we recommend a carbohydrate-rich snack before your run or workout followed by a balanced recovery meal that’s high in protein after your workout.
To double the protein in our Superhero Muffins from 5 grams per muffin to 10 grams per muffin, follow the recipe below. For a complete recovery meal, enjoy two muffins while on-the-go or pair your protein muffin with a smoothie or scrambled eggs and veggies.
These muffins taste less sweet than our regular muffin mix recipe, so for kids (or kids at heart!) you might want to add ½ cup of chocolate chips to the batter.

What You Need:
*Whole Milk yogurt is less processed and works best, avoid non-fat yogurt which often has added sugars and stabilizers, we love Strauss Creamery Whole Milk Greek, avoid Icelandic yogurt which is too thick for baking. **Look for a protein powder with minimal ingredients. Our favorite protein powder for baking is NOW Organic Pumpkin Seed Protein, which is just one ingredient and is also high in iron and magnesium. Whey protein concentrate (not whey isolate) or pea protein powder (if you aren’t sensitive to legumes) also works in baking. Chocolate Banana – This mix soaks up a lot of moisture due to the added cocoa powder, so we recommend skipping adding protein powder. Also these muffins are less sweet once you add Greek yogurt, so be sure to include your favorite chocolate chips. |
