Recipe: Peanut Butter + Chocolate Banana Superhero Muffins

Yield: Makes 24 Mini Muffins – but they aren’t so mini, you can really pile the batter high! Or 12 Large Muffins.

Ingredients

  • 1 cup whole milk yogurt (plain, unsweetened)
  • 3 eggs
  • 4 tablespoons salted butter, melted
  • ¼ cup creamy peanut butter (look for a natural brand made with just peanuts and salt)
  • ½ cup water
  • ½ cup semi-sweet chocolate chips
  • 1 bag Chocolate Banana Superhero Muffin Mix

Instructions

  1. Preheat oven to 350°F. Line muffin pan with 12 large or 24 mini non-stick muffin cups.
  2. In a large bowl, whisk wet ingredients (yogurt, eggs, butter, pb, water) then stir in the entire pouch of Chocolate Banana Superhero Muffin Mix and chocolate chips at the same time. Don't over-stir, the bubbles from the baking soda helps the muffins rise. 
  3. Spoon mixture evenly into muffin cups. Bake for 24 minutes for Mini Muffins or 30 minutes for Large/Regular Muffins. Transfer to a cooling rack then enjoy!
