The Berry Beet, Apple Cinnamon and Chocolate Banana Superhero Muffins can be easily made vegan and dairy-free. Simply swap “flax eggs” for the regular eggs and virgin coconut oil for the butter. Vegan muffins made with “flax eggs” won’t rise as much, but they still taste delicious and have a great texture. 

As a bonus the ground flax adds even more healthy omega-3’s, fiber and micronutrients including magnesium. I always keep a bag of ground flax in my fridge (yes it should be refrigerated once opened) as it saves the day when we run out of eggs.

Vegan Superhero Muffin Mix Recipe

Dairy-Free and Vegan Substitutions:

  • Replace the 4 tablespoons butter with 4 tablespoons virgin coconut oil, melted 
  • Replace the 3 eggs with “flax eggs”— you'll need 3 tablespoons of ground flaxseed and 9 tablespoons of water (round to ½ cup water).

Easy Steps (one-bowl method):

  1. Add 3 tablespoons ground flax and 1/2 cup water to a large bowl and mix until well combined.
  2. Let rest for 5 minutes to thicken and then mix again until well combined.
  3. Add the melted coconut oil (microwave for 20 seconds) and the additional water recommended on the muffin package and stir. 
  4. Stir in the entire pouch of dry muffin mix (first break up any clumps). Add any additional mix-ins to customize your muffins.
  5. Follow the baking instructions on the package. 
  6. Enjoy!
