Baked Apple or Pear Superhero Pancake

Baked Apple or Pear Superhero Pancake

A no-fuss, oven-baked, family-size pancake filled with everything we love about fall—tender apples or pears, warming cinnamon, fluffy texture, and golden edges. Best of all, there’s no standing at the stove flipping pancakes as this batter gets poured into a baking dish.

It’s perfect for a cozy weekend breakfast or an easy post-run brunch, with minimal ingredients and prep so you can get outside for your morning run, workout, or fall adventure while breakfast bakes.

Made with our wholesome Protein Superhero Waffle and Pancake Mix, it’s a satisfying start to the day featuring whole-grain oats, almond flour, whole-grain sorghum, and organic pumpkin seed protein.

Baked Apple or Pear Superhero Pancake

Serves: 6

Gluten-free, Dairy-free option

Ingredients

  • 2 cups Superhero Waffle and Pancake Mix (measure slightly under for each cup since this whole-grain mix settles during shipping)
  • 1 cup whole milk (or non-dairy milk)
  • 3 large eggs
  • 4 tablespoons melted butter (or virgin coconut oil)
  • 2 tablespoons maple syrup (plus more for serving)
  • 1 teaspoon vanilla extract (optional)
  • 2 medium apples or pears, cored, thinly sliced

Instructions

  1. Preheat the oven: Preheat the oven to 400°F. Generously grease a 9 x 11-inch baking dish with butter or coconut oil.
  2. Mix the batter: In a large bowl, whisk together the milk, eggs, melted butter, maple syrup, and vanilla (if using). Add the Superhero Waffle and Pancake Mix and whisk until just combined.
  3. Assemble: Pour the batter into the prepared baking dish and spread evenly. Arrange the sliced apples or pears over the top, then gently press them into the batter so they’re partially submerged. Sprinkle with a little extra cinnamon or cardamom, if desired.
  4. Bake: Bake for 22–24 minutes, or until the pancake is puffed, set in the center, and golden around the edges.
  5. Serve: Let cool slightly, then slice into squares. Serve warm with maple syrup. It's also delicious topped with yogurt. Store leftovers in the fridge and reheat in the microwave.

Fall Variations

  • Apple Pecan: Add chopped pecans or walnuts before baking for a little crunch.
  • Pear Cardamom: Use pears and add ½ teaspoon cardamom.
  • Apple Chocolate Chip: Sprinkle a handful of dark chocolate chips over the top before baking.
  • Extra Protein: Serve with a generous dollop of Greek yogurt for an easy protein and calcium boost.

This is the kind of breakfast that lets you enjoy a slower fall weekend morning. Pop it in the oven when you get back from a run, hop in the shower, then enjoy. No flipping, no fuss, just a warm and nourishing breakfast the whole family can dig into.
