The Berry Beet, Apple Cinnamon and Chocolate Banana Superhero Muffin Mix can be easily customized with mix-ins to add protein, healthy fats and seasonal flavor. Read below for Elyse’s favorite mix-ins. 

TIP: Add your mix-ins at the same time as the muffin mix to avoid over-stirring the batter—you want to preserve those air bubbles that help the muffins rise.

Want More Rise and Super-Moist Muffins? Add yogurt!

For that bakery-style dome, add 1/3 cup of plain yogurt. The natural acidity in the yogurt reacts with the baking soda for a beautiful lift — plus super-moist muffins for the perfect texture.

Mix-In Ideas

Berry Beet Superhero Muffin Mix:

Add even more fresh berry flavor by mixing in 1 cup blueberries (fresh or frozen) or 1 cup chopped fresh strawberries. If your blueberries are frozen, increase the bake time by 5 minutes. For best results, stir the berries in at the same time as you add the dry mix to avoid over-mixing.

Apple Cinnamon Superhero Muffin Mix:

Add ½ cup chopped pecans or walnuts for texture, flavor, healthy fats and protein. For kids, skip the nuts and add chocolate chips (1/3 to 1/2 cup) to transform your morning muffins into a lunchbox or afterschool treat. For super-moist muffins, add 1/3 cup yogurt.

Chocolate Banana Superhero Muffin Mix:

We highly recommend adding ½ cup of your fave chocolate chips (milk chocolate, semi-sweet or dark) to add gooey chocolatey goodness. For kids, decorate the tops of your muffins with a few extra chocolate chips. My kids like semi-sweet chocolate chips best. For super-moist muffins, add 1 large or 2 small ripe bananas or 1/3 cup yogurt.

Lemon Chia Blueberry Superhero Muffin Mix:

We highly recommend adding 1 cup of fresh or frozen blueberries. Stir them in at the same time you add the dry mix to the liquid ingredients to prevent over-stirring. No need to add yogurt to this Mix unless you are making Protein Lemon Blueberry Muffins

The added berries create juicy pockets of flavor throughout every muffin and transform an already delicious batch into something worthy of a fancy brunch. It’s our favorite way to bake them and the closest experience to the original Rise & Run recipe.
