Whether you’re baking a quick batch to share with friends post-run or meal prepping snacks for the week, we want you to experience baking success right out of the gate, so please take the time to read our tips below.
Reheat for Fresh-Baked Texture
Our Superhero Muffins taste amazing right out of the oven — but because they're made with whole-grain oat flour and real butter instead of refined canola oil (the recommended oil for most baking mixes) they'll taste dry when they're cold (butter solidifies). Reheating the muffins is essential:
- Microwave: 20 - 30 seconds (depending on size)
- Oven or toaster oven: 5 - 10 minutes at 300°F (depending on size)
This gentle reheat brings back the moist, just-baked texture.
Customize with Mix-Ins
Don’t skip the chocolate chips when making the Chocolate Banana Muffin Mix. All of our mixes are free from added sugar, which is why chocolate chips aren’t included—you can choose your favorite type of chocolate. The mix is rich in unsweetened cocoa for a true dark chocolate flavor (and antioxidant benefits), so we recommend semi-sweet chocolate chips to balance the dark cocoa.
For Berry Beet, we love adding fresh or frozen blueberries (if frozen increase the bake time by 5 minutes). The acidity in the berries reacts with the baking soda for even more fluffy texture.
Want More Rise? Add yogurt!
For that bakery-style dome, add 1/4 cup of plain yogurt. The natural acidity in the yogurt reacts with the baking soda for a beautiful lift — plus added moisture. Another option is to swap out the 1 cup of water for 1 cup whole milk yogurt + 1/4 cup water (my kids vote this the best swap for richer Chocolate Banana Muffins).
Use Non-Stick Muffin Cups
Skip the cheap, bleached cupcake liners. For best results, use non-stick muffin cups. We love the If You Care brand — they release cleanly, so you don’t lose half your muffin to the paper.
Fully Preheat Your Oven & Set a Timer
Patience pays off here. Make sure your oven is completely preheated before you slide in the tray. A fully heated oven gives your muffins that initial burst of lift and helps them bake evenly. Don’t rely only on the preheat beep — many ovens signal early, before the air and the oven walls are fully heated. For best results, wait an extra 5 minutes after the oven says it’s ready.
Don't Over-stir & Let It Rest
Stir completely but stop as soon as everything is just combined. Add your favorite mix-ins at the same time that you add the Muffin Mix to your liquid ingredients to prevent over-stirring which results in denser muffins. Let the batter rest for 5 minutes before filling your muffin cups. You’ll see little bubbles forming in the batter, this is the baking soda doing its job. Don’t stir again before scooping into the muffin cups. A large spoon or large ice cream scooper works great for filling each cup.
Salted Butter Is Best
Here’s a simple trick for melting butter — without the microwave splatter:
Cut your butter into chunks, place it in a small microwave-safe bowl and microwave for 30 seconds at 80% power. Stir and set aside, it will melt the rest of the way quickly. Some brands of butter seem to splatter more than other brands in the microwave. We like Organic Valley Classic Salted Butter or Kirkland Organic Salted Butter.
Know Your Bake Times
- Regular Muffins: 24 minutes
- Mini Muffins: 20 minutes
- Protein Muffins: 5 additional minutes
- Added Frozen Blueberries: 5 additional minutes
Every oven runs a little differently, so start checking a minute or two early. They’re done when a knife comes out clean and the top feels crisp and looks golden and a shade darker.
Make Them Heartier

Cool Completely Before Storing
Once your muffins are done, transfer them to a cooling rack right away. Cool before storing in a covered container in the fridge. Or enjoy them warm right out of the oven!
