🧇 Vegan Belgian-Style Superhero Waffles

Yield: 4 Belgian waffles

Ingredients

  • 1 cup Superhero Waffle + Pancake Mix (spoon and level to measure accurately)
  • 2 tbsp ground flaxseed + 5 tbsp water (flax eggs)
  • 2 tbsp dairy-free yogurt (Culina Plain & Simple works great)
  • 1/2 cup non-dairy milk
  • 2 tbsp virgin coconut oil, melted (microwave)

Instructions

  1. Make flax eggs: combine flax + water, let sit 5 minutes.
  2. Preheat waffle iron fully then lightly grease it (if needed).
  3. Whisk wet ingredients, then stir in mix (batter is thick).
  4. Cook in waffle iron a little longer than expected—wait until the steam stops rising.
  5. Transfer to a wire rack to maintain crispiness.

Pro Tip: For extra crispy waffles, toast lightly before serving.

🥞 Vegan Superhero Pancakes

Yield: 8 small pancakes

My family votes the crispy vegan waffles as their fave (and they’re easier to cook) but if you don’t have a waffle maker you can use our Mix to make pancakes. 

Ingredients

  • 1 cup Superhero Waffle + Pancake Mix (spoon and level to measure accurately)
  • 1.5 tbsp ground flaxseed + 4 tbsp water
  • 3/4 cup non-dairy milk
  • 2 tbsp virgin coconut oil, melted, plus more for pan
  • 1 tbsp dairy-free yogurt (I used Culina Plain & Simple)

Instructions

  1. Make flax eggs: combine flax + water, let sit 5 minutes.
  2. Whisk flax eggs, milk, oil and yogurt.
  3. Stir in mix until just combined. Batter should be thick but pourable, if needed add another splash of milk.
  4. Heat skillet over medium-low heat and swirl with oil.
  5. Pour batter and cook until bubbles form; flip with a thin spatula and cook until golden.

Storage: Refrigerate up to 4 days; reheat in toaster or skillet
