Most waffle and pancake mixes call for adding just water and vegetable oil (convenient but at the expense of nutrition). Superhero Waffles & Pancakes are made by adding nutritious breakfast staples including eggs, milk, yogurt and butter — adding more protein, healthy fats, and staying power for a balanced and satisfying breakfast.

Follow our tips below to achieve crispy, golden perfection. 

Elyse's Top 10 Waffle and Pancake Tips:

1. Measure mix accurately.

This is the most important tip for great waffles and pancakes. For best results, weigh out 96 grams per batch, or measure just under 1 cup of mix.

Because this is a whole grain mix, it settles during shipping. Scooping directly from the bag may lead to using too much mix, which can result in denser waffles—especially noticeable if you’re making a big batch to reheat later in the toaster.

2. Use full-fat ingredients.

Elyse recommends using large eggs, salted butter, full-fat Greek or whole milk yogurt, and whole milk. Non-dairy milk and non-fat yogurt work too, but the resulting texture won't be as buttery and satisfying. Full-fat dairy is less processed, easier to digest and adds healthy fat and protein to start your day with a satiating breakfast that will keep you full until lunch. Avoid using Icelandic-style (very thick) or flavored yogurts.

3. Whisk — don’t overmix.

Fully whisk the liquid ingredients first, then whisk in the Mix until just combined. Avoid over-stirring.

4. Let the batter rest.

Allow it to sit for 5–10 minutes while your waffle iron or skillet fully preheats. This improves texture and structure.

5. Don’t overfill the waffle iron.

Waffle irons vary in size and shape — follow your appliance’s cook-time guidelines for best results. You can pop just cooked waffles in the toaster to get them even crispier on the outside (low setting to prevent burning).

6. Use a mixing bowl with a pour spout.

It makes transferring batter into your waffle iron or skillet much easier (and less messy).

7. Add vanilla for sweetness.

For a warm, sweet aroma, whisk in 1 teaspoon vanilla extract with the eggs. And check out our favorite waffle and pancake toppings! Don't skimp on your fave toppings.

8. Melt butter gently.

Partially melt the butter in a small bowl in the microwave, then stir to finish melting. This helps prevent splattering.

9. For pancakes, add melted butter to the batter.

This means you’ll need less oil in the skillet. We like lightly coating the pan with virgin coconut oil.

10. Make a double batch.

We always double the recipe on the bag and reheat leftovers in the toaster for crispy, golden waffles on busy school mornings. My picky 8 year old can't function without his daily waffle (in fact he's the inspiration behind this Mix!). 

How to Store and Reheat Leftover Waffles

One of the best things about waffles and pancakes? They’re meal-prep magic.

Our son is up at 6am every morning and he falls apart if he doesn’t eat right away. Lucky for us we always have a stash of waffles in the fridge. 

If you have leftovers (make a double batch!), here’s what to do:

  • Let waffles cool completely
  • Store in an airtight container in the fridge for up to 5 days
  • Reheat in the toaster on a low setting until warm and crisp

This technique also works for leftover Superhero Pancakes. 

You can also freeze a batch of waffles or pancakes and they can go straight from freezer to toaster (just use the thaw setting on your toaster).
