I’ve never made these from the cookbook and wasn’t sure if I’d like them because I’ve never been a fan of the lemon poppyseed type muffins BUT they are now my new favorite flavor!! I’ve made 2 batches and ordered 5 more bags! They’re so crazy delish I wish I’d tried them sooner.
And did I understand it correctly that they’re a limited batch??? Nooooo please keep them available as a regular option!

I thought the beet raspberry was my favorite… but the lemon blueberry are Amazing! They lasted 2.5 days. My hubby demolished them!

Hi Deborah! I'm thrilled to hear you love the Lemon Chia Blueberry muffins as much as my family does. Sounds like they were a hit! Thanks for sharing your wonderful feedback. - Elyse

Love, love, love these SuperHero Chocolate Banana muffins! Super convenient. Super delicious. The perfect grab and go fuel I need before my morning runs.

For a bigger chocolate kick I add dark chocolate chips to I am an admitted chocoaholic ;)

I've always loved SuperHero muffins, but the muffin mix makes it super easy to always have a fresh batch in the fridge. Yup, I'm addicted.

Love the convenience of the SuperHero Muffins mix. Less than 5 minutes from melting the butter to the oven. 24 minutes later - moist, delicious, runner fueling muffins.

I add dried cranberries to the Apple Cinnamon mix for a bit of tart sweetness.

Yummy muffins in minutes!

These muffins were a hit with my whole family, including the ones with a sweet tooth! I love the fact that they are healthy and when I don't have time to make a batch from Elyse's cookbooks we can still enjoy a breakfast or snack that isn't loaded with unhelpful ingredients. The only problem I am having is the variety pack I ordered has already been devoured and my kids were disappointed that my next subscription order won't arrive for 3 weeks! I went to take a picture of the 3 remaining muffins, but alas they were gone.

Haha! Love this review so much. Best superhero muffin photo ever 😂 - Elyse

My sweet friend brought me a muffin mix and the waffle mix all the way to Barcelona to try. I made the beet muffins today (adding blueberries and 1/4 cup yogurt per recommendations on the website), and I’m sold. They are delicious! Even the batter itself tasted delightful. You can actually taste that they use “real” ingredients and not artificial flavors and random additives. I will be recommending these mixes to my family back in the States and waiting for the mixes to be available in Europe!

Makes my day to hear our Superhero Mixes have made their way to Barcelona! It would be a dream to launch in Europe someday. Thanks for leaving us a berry sweet review :) - Elyse

I cannot keep these in “stock” if I tried- my kids gobble them up within 2 days when I make them! Loved having this wholesome option to make in bulk for an Easter potluck we are attending- so easy!!!

Love this mix!
I made 36 mini muffins with walnuts on top. One or two before or after skate skiing were a healthy snack to share with friends.
Id like to try them again with added protein and either olive oil or applesauce instead of butter.

Thanks Amy for taking the time to review! I love making them with salted butter, if you swap olive oil I would suggest adding a pinch of salt. I think applesauce would be too dry and they already have a significant amount of dehydrated apple powder in the mix. Another delicious swap is 1 cup whole milk yogurt + 1/4 cup water for the 1 cup water, they'll be less sweet but a more hearty recovery snack post skate skiing. Enjoy! - Elyse

Thanks for making this muffins mix. It is super easy to make. We have made two batches already. We added a few non- dairy gluten free chocolate chips (per my kid’s request) and my family really has enjoyed them. I would highly recommend this mix to all , especially busy families!

I love all the superhero muffin mixes but I especially love the Beet Berry for the pre-workout benefits (found in beets) and high antioxidant content (found in berries). They are so delicious - a truly no-guilt treat! I sometimes top with some shredded coconut before baking for an added layer of yum.

I do love baking from scratch and avoiding processed “snacks”, but sometimes there just isn’t time to conquer it all and this is such a perfect option. My partner bike commutes to work every day and it’s been the best and easiest grab n’go early morning fuel!

These are awesome!! I made two batches and put half in the freezer so we can pull them out when we are on the go. I added mini chocolate chips to the chocolate muffins and fresh blueberries to the Berry Beet. They are all SO good!!

These muffins are great! Super easy to make and delicious. So far I’ve only tried the berry and beet ones but I’m looking forward to the other flavors. I know they will be just as good. Highly recommended!

I’ve been making these Superhero Muffins every week because they’re just that convenient. The mix is super easy to throw together, tastes great, and is made with real ingredients — no junk.

Perfect for busy mornings, long runs, or just having something quick on hand. Honestly, they’ve become a staple in my kitchen. Highly recommend!

I was excited about this mix and it saved me at least 30 minutes in prep plus clean up. Great fluffy taste that does not feel like you're eating a 'muffin mix' - I'm really happy with this product as all the ingredients are clean and gluten free.

I even used the time I saved to do a a little bit of yoga that day (which I never make time to do). win-win! :-)

Ordered the variety pack! Have baked only the berry beet ones so far and they were outstanding! So easy and delicious! I have made many varieties of superhero muffins from your cookbook so I knew they would be good. Will definitely order again. Hopefully you can expand your flavors in the future.

Amazing! I just received my order and baked up Berry Beets, OMG, delicious!! Super easy to put together. They baked beautifully, moist and they are so flavorful, and with just the right amount of sweetness… those chunks of raspberries, YUM!

I’ve been making superhero muffins on a regular basis for years, and everyone in my family has a favorite flavor. Dark chocolate banana is mine! While I’m not going to stop making them from scratch from time to time, it was AMAZING to make up a batch of superhero muffins so quickly! The muffin texture was really fluffy (I might need to process my oat flour a little longer…), and the only thing I missed between the book recipe and the mix was the occasional larger piece of mashed banana (but that can be fixed with an extra freezer banana mixed into my next batch). I’m looking forward to keeping this mix on hand!

Love this flavor! Especially when adding chocolate chips!

Hi Jaclyn! We're so glad you love the Berry Beet flavor. I haven't tried adding chocolate chips to this one since I love it so much with fresh blueberries added but I'm definitely going to try next! Thanks so much, Elyse

Obsessed with these muffins. At first, I bought them just to try thinking that I couldn’t justify the price. However, they are so good and so quick to make that I keep coming back for more. They are my favorite thing to cook with my two toddlers because the amount of time it takes to prep them matches their short attention spans. ❤️

Hi Jaclyn! It's a life saver for busy parents. Love hearing that you share the easy baking as an activity with your toddlers. Pretty soon they'll be baking them all on their own like my two kids! Enjoy, Elyse

Would it work to add some protein powder to these to enhance the protein content without ruining the texture?

Hi Angie! Yes it works great to add Protein powder to this Mix. Check out the Protein Superhero Muffin Recipe on the blog. I recommend a combo of greek yogurt plus protein powder instead of just powder to really boost the protein. I love the protein variation for post-workout! Thx for the review! Elyse

FAQs

  • Superhero Muffins are made with real, nutrient-dense ingredients including oats, almond flour, dates, dehydrated fruits and veggies and the fresh ingredients that you add including eggs, butter, milk or yogurt (or water)—giving you lasting energy without the sugar crash. Originally developed by Shalane Flanagan and Elyse Kopecky as a performance snack for runners, they’ve since become a go-to for anyone seeking freshly baked fuel instead of overly sweet and hard-to-digest energy bars.

  • The base of our mix is made with gluten-free oats, almond flour, dates (ground into a powder), baking soda and salt. Then each muffin flavor features one dehydrated veggie like beets, sweet potato, or carrots and one or two dehydrated or freeze-dried fruits (ground into a powder) to provide a hint of natural sweetness. Dehydrated fruits and veggies retain their nutrients. Depending on the flavor we also add cinnamon and ginger or unsweetened cocoa powder.

  • Simply add eggs, butter or coconut oil and water (or milk or yogurt) and then any extra mix-ins to make them your own! Full instructions are on the back of the pouch. On our blog, you can find additional recipes to make them vegan or high in protein.

  • Absolutely. They work great with virgin coconut oil instead of butter and flax eggs. We include tips for substitutions here.

  • Each pouch makes 12 nourishing muffins. We recommend using this brand of non-stick muffin cups.
