Oven-Baked Strawberry Superhero Pancake

Ingredients
- 2 cups
Superhero Waffle and Pancake Mix
- 1 cup whole milk (or non-dairy milk)
- 3 large eggs
- 4 tablespoons melted butter (or virgin coconut oil)
- 2 tablespoons maple syrup (optional, plus more for serving)
- 1 teaspoon vanilla extract (optional)
- 2 cups fresh strawberries, hulled and sliced

Instructions
- Preheat the oven to 400°F. Generously grease a 9 x 11-inch baking dish with butter or coconut oil.
- Mix the batter: In a large bowl, whisk together the milk, eggs, melted butter, syrup (if using) and vanilla (if using). Add the dry mix and whisk to combine.
- Assemble: Pour the batter into the prepared baking dish and spread evenly. Scatter the sliced strawberries over the top, give a little shake of the dish to partially submerge the berries.
- Bake for 22 - 26 minutes, or until the pancake is puffed, set in the center, and golden around the edges.
- Serve: Let cool slightly, then slice into squares. Serve warm with maple syrup to drizzle on top.
