Made with Greek yogurt, pumpkin seed protein, blueberries, and mango, this smoothie bowl delivers a powerful combination of protein, fiber, probiotics, and bone-building minerals to support recovery and keep you satisfied all morning long. The creamy texture and berry- forward flavor are the perfect complement to the bright citrus notes in the muffins.

Blueberry-Greek Yogurt Smoothie Bowl

Serves: 2

Ingredients

  • 1 heaping cup frozen mango (or tropical fruit blend)
  • ½ cup frozen blueberries
  • ½ frozen banana (optional)
  • 1 cup plain Greek yogurt
  • 2 to 3 tablespoons unflavored protein powder (I love NOW Organic Pumpkin Seed Protein)
  • 2 to 3 dates, pitted
  • ¾ cup milk, coconut water, or water

Instructions

  1. Combine all ingredients in a blender and blend on high speed until smooth, using the tamper tool as needed to keep everything moving

  2. Divide between two cereal bowls or wide-mouth pint jars (office packable). Top with your favorite granola, fresh berries or sliced banana, chia seeds, or coconut flakes and enjoy.
