No muffin pan? No problem. Bring your favorite Superhero Muffin Mix on vacation and turn it into a wholesome snack cake or breakfast cake instead. Same mix, different format and my kids loved it this way.
We topped half of ours with chocolate chips for a cake vibe, and it disappeared fast.

Superhero Sheet Cake
Serves: 12
|
Ingredients
- 1 bag Superhero Muffin Mix
- 4 tablespoons melted butter (or virgin coconut oil)
- 3 large eggs
- 1 cup water
-
1/3 cup yogurt
|
Instructions
- Preheat oven to 350°F. Lightly grease a 9×11-inch baking dish with butter or oil.
- Batter: Prepare the Superhero Muffin Mix as directed on the package, but add 1/3 cup yogurt to the wet ingredients for extra rise and a super-moist, cake-like texture.
- Assemble: Pour the batter into the prepared baking dish and spread evenly. Give the dish a shake to spread out.
- Bake for 28–32 minutes, or until the cake center looks set (not jiggly) and the edges are golden.
- Serve: Let cool for 15–20 minutes before slicing into squares for packable snacks.
